Once you open a list and want to change who is in this list, use the button in the upper right of the page to manage that list.

Lists can be used 2 different ways that are important to understand.
You can use them in a "who to include" way, or you could use them in a "who to exclude" way.
Look for the audience selector facebook audience selector all over the site to control who sees what. To use one of your custom lists, select "custom" and then another box will appear for you to type list names into.

INCLUDE EXAMPLES
Suppose for some reason, there's a group of 3 people that you want to be able to see your birthday, but you dont want everyone else you are friends with to see your "About Me". Create a list called "About Me". Add those 3 people to it. Then go to your edit profile page, find where your About Me is listed, and then click the icon to the right that determines who gets to see it. Select Custom, and then type the name of the list into the MAKE THIS VISIBLE TO box and save.
